Creamy Lobster Gnocchi
Yield: 2 Servings
Prep: 10 minutes | Cook: 20 minutes
Total Time: 30 minutes
Ingredients
- 2 tablespoons extra-virgin olive oil
- 12 ounces potato gnocchi
- ¼ cup unsalted butter
- 2 garlic cloves, minced
- 1 tablespoon finely diced shallot
- ½ teaspoon ground paprika
- Meat from 2 lobster tails, chopped
- ½ cup heavy cream
- ¼ cup grated Parmesan
- 2 teaspoons lemon juice
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- 1 tablespoon chopped fresh parsley
Step 1
Check the gnocchi package; boil first if required. Heat oil in a large skillet over medium-high heat. Add gnocchi and stir for about 3 minutes.
Step 2
Add butter. As it melts, stir in garlic, shallot, paprika, and lobster. Cook approximately 3–4 minutes, until lobster is opaque and cooked through.
Step 3
Reduce heat to medium. Add cream, Parmesan, salt, and pepper. Stir until the cheese melts and the sauce coats the gnocchi.
Step 4
Mix in lemon juice, scatter parsley over the top, and serve.
