All-Star Queso Blanco

Ingredients
- 12 ounces evaporated milk
- 1 tablespoon cornstarch; use ¾ tablespoon for a thinner dip
- ½ teaspoon onion powder
- ¼–½ teaspoon garlic powder
- ½ teaspoon kosher salt, adjusted to taste
- 8 ounces pepper jack cheese, freshly shredded
Step 1
Whisk evaporated milk, cornstarch, onion powder, garlic powder, and salt together in a saucepan over medium-low heat.
Step 2
Heat gently, stirring often, until lightly simmering. Maintain a gentle simmer for 1–2 minutes without boiling.
Step 3
Turn heat to low. Gradually add cheese, stirring each addition until melted before adding more.
Step 4
Taste and adjust salt. Serve warm with tortilla chips.
