Watermelon, Crab, and Feta Salad

Ingredients

Salad:

  • 1 small watermelon rind peeled, flesh cut into medium dice
  • 12 ounces fresh jumbo lump crabmeat
  • 6 oz Crumbled Feta Cheese
  • 3 radishes, shaved

Mint Vinaigrette:

  • 1/2 cup white balsamic vinegar
  • 5 sprigs mint
  • 2 tablespoons shallot, minced
  • 2 teaspoon freshly chopped mint leaves
  • 1 teaspoon freshly chopped cilantro leaves
  • Salt and freshly ground black pepper
  • 1/4 cup grapeseed oil

Preparation

  1. Mix all salad ingredients in a bowl.
  2. Add all the dressing ingredients into a jar and shake until combined and emulsified.
  3. Drizzle dressing onto the salad.
  4. Garnish with fresh mint leaves.
